how old before harvesting cockerals for the pot?

I got a flock of 8 chicks that are now 8 weeks old. Unfortunate it looks like 4-5 of them are roos (I'm in denial about one because it's my favorite) we are planning to eat them and I'm just wondering when we should go about that? When do they reach full size generally? They are just barnyard mixes, RIR/EE mostly. I want to get it over with add soon as possible so I can get some more hens.

For a good size (still probably smaller than store bought) I would say between 18-20 weeks old.
