Wanted to make some egg salad and know that you can not hard boil a fresh egg since it won't peel well. How old do the eggs need to be before they will peel successfully? My husband loves hard boiled eggs in tuna salad as well.

I was going to go with two-week old eggs...but I read the thread in the link....I've never tried it that way.

Of course, I always crack my boiled eggs by smacking them on the counter one good solid lick, then roll them from there. I usually get the shell off in one piece like that.

This is what I do for fresh eggs, I hard boil them like usual then I pour off the hot water and add Ice, Leave them just long enough to cool the outside then moisture will build up between the skin and the egg. Now they will peel easy. Peel all of them before they have a chance to cool down. I have read some where to leave fresh eggs in the fridge for a month. I do not know for sure. Just makes me wonder how old the store eggs are??

Thanks for the replies. I will try them fresh - I bought eggs at Farmer's Market before getting my girls and the people were saying "no way DON'T hard boil fresh eggs" - but now I'm thinking what do they know I'll go with advise from BYC. Guess if they don't peel perfectly going to get cut up anyway so why does it matter in the end. But again, thanks for the replies.
