how old should a hen be so i can incubate the eggs

It can be any laying age. I prefer to hatch out older hen's eggs because the older the hen, the higher her immune system is, and she'll past that down to her egg/chick.
 
It depends on when she started laying. Some breeds lay sooner than others. I avoid trying to hatch eggs from at least the first month or two because they tend to be smaller, and the hen’s body is still working out the kinks of egg laying, both of which have the potential to cause issues with a developing chick.
