Take whatever I say with a grain of salt b/c I've never held the belief that I could make money off my chickens. If I can sell some eggs and recoup some of the cost of having them, the so be it. I have chickens b/c I like having hem and no other reason. That said, I think it depends upon where you are. I think somebody might be able do well so pasture-raised meat birds in the right market. For instance, if I had the time and space I think that I could sell a lot at the local farmers markets. Organic and cruelty-free would sell pretty well, I think. I just don't have the time or space though. Barring that, people seem to make a bit off of hatching eggs. I guess you'd have to have a breed others wanted and you have to have good stock to command good prices though.
Like some of the others have said, I think you'd have to take it very carefully and very slowly. I wouldn't want to go out and put 1,000 birds on range if I didn't have buyers lined up.
