I believe you will hear all conventional wisdom indicate that they are best kept at about 55 degrees and about 40-50% humidity, and they should probably be turned. I would guess that is true for best results. That said a neighbor brougt 24 eggs to me this summer that she gathered from a pile in her barn then stored on her front step for a week or so with no turning and varied temps and humidity, she asked me to put them in my incubator and I did with some eggs that I had carefully stored and turned. The hatch rate from the "abused" eggs was the very same as my eggs. They both hatched at 90+ % and that is 90% of the 24 she brought me. So go figure, I would get as close to ideal as I could, but not be afraid to set eggs up to a couple weeks old even if they have been in less than ideal conditions. I swear some times they are just meant to hatch and other times they are not.
