how to age an australorp

Is there any way to age a black australorp? (or any chicken, come to think of it?)
I have just bought 2 hens. They are in quarantine, as I only bought them 5 days ago. I was told they are a year old. They haven't laid, but I reckon that's due to the stress of the journey and being cooped up in a dog crate on their own.

I think they are black Australorps and they could possibly be a year old. Stress of moving does often cause laying to cease for a little while
