How to clip my chickens wings?

My Bantoms keep flying over my fence, so I've decided to clip their wings however I haven't done it in a while and I've sort of forgotten, how high can you go up their wing?

Most chickens jump to the top of a fence with a solid structure then jump off the other side.
Bantams can still fly with their wings clipped, just not as high.

2 metres high - it's the classic vertical wood panels type? They can only just make it to the top, so it'll be fine if it only makes them fly lower.

I had to retrain my flock to stay within the confines of their pen and they were regularly flying over the gates. I started conservatively by just clipping the primary flight feathers of one wing. The vast majority still easily made it up to the gate and over.
So I did the primaries of both wings. A little over half made it out.
I then started working my way through the ones that were still getting out and removing the secondaries on one wing for that batch. At this point, just the most determined 2 or 3 were still making it out so I cut the secondaries of the second wing and that did the trick.
It's up to you if you want to take this approach or just cut the primaries and secondaries of both wings.
To me it rather matters how much cover and security they have where you are trying to keep them. Having full wings helps them evade predation a bit better.

When trimming the primaries, clip about half Or just less than half the length of the full grown/normal feathers. The primaries will be roughly the same length as the untrimmed secondaries.
 
Cut in a slight arc, following the line of secondaries.
