I always marinate large pieces in some form of acid over night ( smaller pieces you do not soak as long) to help counteract the gamey taste. A white wine,(not red, it will enhance the gamey taste just like red will enhance the fishy taste in fish) vinegar (not distilled white vinegar but a good cooking vinegar), or lemon juice all help.

Then rinse and cook slow and low (low temperature) with seasonings, moisture and a fat source (such as butter, bacon fat, olive oil, etc). You can also slow cook it in a BBQ sauce if you rather.

That is how I usually do it.
 
Bambi Burgers are fantastic. You have to use a little oil in the pan since deer is so lean. Salt/pepper to taste. Keeping it simple lets you really taste the quality of 'natural' meat. We bought a meat grinder several years ago just because it was on sale. It has been used to make the best deer burgers. If it is too gamey you can always cut it with some cheap ground beef. This also puts some fat in it for cooking.

My former neighbor made this killer deer jerkey in her oven. Next time I'm down there I will have to go ask for her recipe.
I make mine in a Little Chief smoker. I will normally slice it about 1/3" sprinkle it with pickling salt and let it sit overnight in the fridge.
Drain the liquid off and run a toothpick through one end and hang it down through the racks. I like apple wood and hickory. Smoke it for around 12 hours or longer.
DS likes to put cracked pepper on his jerkey and smoke it.
