We have 6 pullets:

19 Weeks Old:
1 Ameraucana - started laying on Sunday 6/12/16 (an egg a day so far :p)
2 Ameraucana's - not laying yet
2 White Leghorns - not laying yet

11 Weeks Old:
1 Rhode Island Red

How should I incorporate laying food?

Or should I just put out a separate tray of oyster shells for the laying bird to peck at? I'm worried that the 11 week old will eat it, I don't want to harm her.

Right now they are all eating grower food.

No need to ever feed layer. There is no magic ingredient in it, just lower protein content and a lot more calcium. Grower is safe for all ages, stages, and genders. As long as you provide a calcium source for those that need it, you can feed grower from hatch all the way till the day they die.
