How to safely hold an uncooperative rooster still?

I have a very large RIR roo and i will valch myself that the football hold works well

I read somewhere on here a while back too that stroking their wattles helps calm them and that is what I do with my boys or just brush my index finger from under their beak and down their neck. I have a feisty NHR roo who is the top cock in the yard. He even calmed down a lot after I did this with him the other day. Over the summer once he asserted his dominance on the flock he would start dancing the wing down shuffle with me and I would go after him and he learned to keep his distance. Now that nobody is laying I decided to pick him up and stroke him a little. He isn't running from me like he used to. I am sure I will have to keep him in check later if he starts up the dance, but I am sure he will know who is boss in short order

I am trying to sell him and a few others though to make room for chicks who are going to be coming this spring. I will have to share the tidbits with whoever takes him.
