I don't do a lot of birds at once, so I haven't minded plucking at all. And the act of peeling the skin sorta makes my stomach turn.

But I'd like to SEE how it's done, and perhaps my processing pal & I may decide to skin rather than pluck our birds some times. I'm especially interested since the skinners report how quickly they can get the job done. We're coming into high summer here & I have a lot of cockerels to do in the next few months.

I'd also like to know how to skin instead of pluck when I get another bird like one of the guys I did today. The other cockerels had nominated him for Flock Girlfriend, and his back was all scabby

After plucking I cut & peeled that nasty skin away, but it would have all gone faster if I'd have skinned him entirely from the start.

I've heard the skinning process described in words, but I would appreciate it if someone could post some pictures of it being done. Thank you!

I'm going to post a video of my method as soon as I get my lazy butt around to doing it- I had my buddy videotape me this past weekend. How do we upload videos?
 
I would assume you upload the video offsite to YouTube and post a link. Thanks so much for making the video of your processing! 5 weeks and counting until processing . . .

I wish I'd known that you skinned 'em.
I'm in mid mi and I'd have liked to get a
live tutorial.

I guess I'll have to settle for the video.
Hopefully, you can figure out the uploading
so I can watch before I gotta do the deed.

Sesa, I must thank you for posting that link to the YouTube video. Not only was it a great video tutorial on skinning a chicken, but it also showed helpful information on cleaning them too.

My processing pal & I butchered 2 SLW roosters today and followed the procedures shown in the Custer family video. It was our neatest & easiest session ever! Of course we worked much slower than the Custers did, but their directions were very clear & easy to follow. Not only were we spared the toil & fuss of scalding & plucking, but we were able to clean out our birds much more thoroughly & easily.

I must admit I was awfully envious of the nice knives the Custers used, they were strong & sharp enough to quickly slice through both skin & tendon. And the chickens they were processing were beautiful, big fluffy white birds just bulging with meat. I don't know if they were regular Cornish Xs, or if they have a special way of raising them so they keep their feathers on their breasts & bellies.

But I think they deserve all the nice things life will give them for taking the time to film & post such a helpful video.
