How to skin a chicken?

Well now we have done it both ways and since my DH did most of the work [I helped when plucking, ] he says skinning is way better and easier. Thanks for all the opinions and help. Comes down to what works best for those doing the task.

Well, the skin does taste good, and it has lot of collagen to contribute to stock. But unfortunately, its also where a lot of the fat lies. Many of us just can't have that in our diets for various reasons, such as my rail thin mother who has had 2 heart attacks and 3 stents, despite always having been very active, eating properly, and never smoking or drinking.
