How to stable my homemade incubator????

I have made a home made incubator out of a cooler and light with a water heater thermostat. Everything works, I just having a hard time getting the temperature to stay when the light cuts off. Can anyone give me some advice about what to do?

Have you tried a heat sink? Rocks or jars of water?
