How do you stop it from fogging up? Especially after day 18 when you want to increase the humidity? Currently I've been putting a tea towel on the pane of plexiglass and taking it off when I want to look at the eggs but I find that if I take it off for too long (which happens often at pip time) the window starts to fog up and I lose visibility. Would a double pane work (ie like a double pane window)? I've even considered changing the position of the window - currently I have it on top, maybe on the side instead?

I have a double pane on mine but it is not sealed tight so there is still some condensation. There are some anti fog windshield treatments you could try, should be able to find them in Wally World.
