How do you tell if the the females eggs are fertilised or not?

Crack the eggs open.
if the egg is fertile it will have a white dot with a faint or very visible ring around it. Resembling a bullseye

The infertile egg will just have a white dot.

It takes a bit of experience to be sure, put a pad and pencil on the counter near the stove, and keep a tally. If you can keep the tally according to the color of egg. If you are getting a high percentage of fertile eggs while you cook, you can be confident of setting eggs, as they should be fertilized. If they are not fertile, you need to take a look at your rooster set up.
