How will I know

How can I tell which hen is at the top of the pecking order. How is the order established?

You’ll only know this by watching them. That’s the fun part!
Chickens communicate with subtle clicks and clucks. Sometimes they get along just fine without much drama a little peck here and there.
I feel the flock does well if they all start off as chicks together. Easy
My older hen was a brat..bossy! plucked a few feathers nothing truly harmful when I got new chickens this spring (31/2 months old upon introductions)
She actually was very good with them.
