Humidity of incubation

Since I'm new at this I have so many questions. 1. How do I know if the humidity is at 45%? I have a still air incubator but I do have the egg turner. The company for the bator only said to add wet sponges if my water levels dropped a lot. I'm not quite buying that. But I don't know how to tell if I have reached the correct percentage. 2. Once it is time to stop turning the eggs I took them and placed them into another incubator laying on their sides, not standing up, was that correct?

I bought a wal-mart a thermometer with a humidity gage right with it...battery operated, so I lay it on the eggs...I only have guineas. I do between 45 % and 55% on turning, then bump up to 65% or 70% on lock down...that is when I add a sponge or 2 It was 6.50 and in the kitchen supplies.
