Husbandry question

    Lost one of my favorite hens to a pair of raccoons. I want to put some of her eggs under a broody hen. I am sure these eggs are at least 3weeks old and have been in the fridge; Any hope at all and how long after a hen is separated from a rooster can you put her with a different rooster and have the offspring be his? Thanks in advance for replies.

    10 days or so for a new roo to doo. and 3 weeks is probably way too long
