Hydrometer/Thermometer or incubator temp?

When using a hydrometer/thermometer in your incubator do you go off that reading or the incubators reading? Mine never match on readings. The hydro/ temp is always different than the incubator temp reading.
 
Pay no attention to humidity readings. The humidity is unimportant, it's the weight loss of the eggs that matters. Aim for a minimum of 11% and a maximum of 17%. Ideal weight loss is 15%.

Best of all get rid of your incubator and use a chicken. Broody chickens know what they are doing.
