Hygrometer Question

I want to build my own incubator and wanted feedback to see if anyone knows if this hygrometer will work based on temp & humidity accuracy. I will be building the incubator from an old freezer based on some ideas I saw on here. I have found most hygrometers relatively accurate vs most thermometers. I have some expensive digital ones and some cheap PetCo ones and they all read the same.
 
So how important is it for the humidity to be +/- 10 %? As for the temp, I like this one since it is only +/-1.8 on accuracy. I'm new at this incubating stuff and want to make sure I get it as close to error proof as I can.

The only hygrometer I have seen off by 10% was the cheap one that came embedded in a farm innovators incubator (don't buy those!!). Like I said, all the others I have match, Digital AccuRite's (probes and remote sensors), analog PetCo models, etc.

Now when you are talking about temperature thats a different story. Digital thermometers would rather be precisely wrong than approximately correct. Stick with a high quality spirit filled bulb type and calibrate it! Better yet buy a mercury one if you can find it.
 
Humidity "by the book" should be 50 - 55% 1 - 18 and 65 +/-% 19 - 21. But most people have their own opinion and what works for them may or may not work for you.
 
Great info on the thermometer, I would have just gotten a digital one. As for the hydrometer, I'll look into the ones you mentioned. Thanks cameronfarm!!!
