On my Mac, option+hyphen is an en dash, like this: –

Shift+option+hypen yields this: —

Maybe it's the font, but I've always felt it's not long enough for a proper em dash.

Here's the progression from hyphen to en dash, to em dash: - – —

ETA: And on my website I use — in my blog posts and still end up with the Mac's version of an em dash. It's simply not long enough, regardless of the font. In publishing and on other websites, the em dashes are longer.
