Don't fuss with the plucking. Just skin it. Don't expect too much meat even though he is older. Make sure you soak it overnight in a brine. This makes the meat tender. Setup and cleanup will take longer than anything else. Good luck. Roosters are mighty tasty!
PS- yes remove food at least 12 hours before. Makes the crop not so messy and gooey.
