I caught the bird bug...what do I need to know about incubating?

We are in love..our chickies are just so fun. I'd love to incubate some eggs and get some more chicks while teaching the kids a fun science project. so what do I need to know? Any incubators to stay far away from? I read the forum but there is so much to wade through! thanks in advance
