Sounds like a fun, healthy menu.
I should mention that besides a laxative effect, the one problem with molasses is that it has iron, so they can get too much over time, and it can reduce calcium absorption for a bit.
I like to add tumeric, cinnamon, ginger, mint, and sometimes aloe (if they aren't allergic,) and I like to make sure they get some dandelion and red clover. I don't know about echinacea for marek's, but I give some during times of stress. A little seems to help, but I don't use it long.
