Not sure why hens make a fuss but pulling feathers might be a little painful at times. Or they simply are complaining.

Biting the neck feathers or grabbing, it probably helps the male positioning himself more better than "free flight balance" method.

Chickens do the "foreplay", the mating dance that is!
