She's giving me an egg a day, the second was bigger than the first! I almost can't bring myself to eat them lol she's laying in the evening....is this unusual?

No. She'll get it all worked out in a month or two of laying. Don't be surprised at double yolkers, shelless eggs, etc. All perfectly normal.
