I love cheese

Indulge, but watch your salt people! I love cheese, but not near as much as my son-in-law....he gets a chunk of cheese the 8 oz from the grocery store and eats the WHOLE thing in one sitting!!!!!!!!

THAT is gross IMO. I do love the sharp cheddar though in smaller doses

I just read that France is a cheese cellar the size of Texas. I'd like to go there before I die. Somebody else wrote, "the only reason to travel is to eat a lot more than usual", so I hope I get to travel someday, to France.

Well I'll tell you it is a whole lot cheaper to make cheese than buy it - Especially soft cheeses, such as Chevre.

That stuff sells for about $5 for some tiny little block, smaller than an iPod. . . . And our Goats pay for themselves, giving us amazing Chevre for free. I'm talking two pounds of it out of one gallon of milk, which we can get from a goat in one to two days.

I'll admit that I have yet to try Goat Cheddar yet, as ours is still aging, but I'm excited.

To me the biggest enjoyment in it is all the patience and care that goes into it. . . And the smells. I don' t mean the "stinky socks" smell, but the smell of draining the whey from the curds. Aaah, it smells good.

Oh and of course there is enjoying the taste of the cheese when you finally get to eat it.

Thank goodness we bought a property that already has an extra building that works just like a cheese cellar.
