I need a recipe that can freeze and then be microwaved...sick friend

Does anyone have a recipe that i can cook then freeze and then micro wave?

A 31 year old woman that owns a local preschool is having a double mastectomy on Wednesday of next week. A mutual friend is trying to get meals for the family. She wants it easy so the husband can pop it in the microwave and not have to worry about the oven and etc....

Anyone have any ideas?


Oh and not too spicy please.
 
When I lived in California I had a mechanic in San Francisco, this cat was sharp. Old World guy who was very close to his momma and sister. One day out of the blue he calls me frantic... His mom and sis had gone back to the old country for 2 months - he'd been eating in restaurants for 10 days and couldn't take it any more. We struck a deal - he gave me $200.00 and I went home and worked myself into a tizzy cooking for him. In an extremely tiny apartment I whipped out about a dozen partially baked frozen pizzas

and about 25 meals packed in Glad microwave storage containers. I made a pork loin, I roasted a bunch of chicken thighs, I made some orichette pasta with onions and peas, I made some linguine with a puttanesca sauce, and some red potatoes with chopped parsley and lemon juice. I mixed and matched slice pork with the starches, pasta with the chicken, linguine by itself or with chicken. You get the idea.... This is what my fridge looked like

You could do up a bunch of premade portions in those containers and the folks could eat them as they need to. For breakfast yoghurt, granola and english muffins. Slice pork loin sandwiches for lunch and on and on...

great ideas Mike!!!

Something I did when SIL had just had a baby was browned then froze 1# portions of hamburger, then bought spaghetti and sauce, canned tomatoes and kidney beans, manwich and taco kit/salsa. She could grab the burger in the morning to thaw, then decide what she felt like making with the other goodies I provided.

I always make lasagna, that heats up real nice. The more simple the recipe the more everyone seems to like it.

Cook hamburger meat with italian seasoning you can cook up an onion in that also if you like. Then just layer dry noodles, spagetti sauce, meat, lots of cheese, then another layer. Add 1/2 cup of water to the top.

Bake at 325 for an hour or so and waaa laaa.

No special recipe needed - anything you normally cook can be frozen in individual servings and then nuked.

Chili, spaghetti, lasagna are all good freezer candidates.
Any meat - loaf or roast - poultry, fish - all work.
In the Summer I grill burgers and chicken and freeze the extras for lunch later in the week.
Some cheese gets gummy when frozen but it's still edible.
Vegetables are good if you undercook them a bit so they finish in the microwave.

Since I live alone I often freeze half or more of what I cook for dinner.

You are a good friend to help like this.
Too often people ask "What can I do?" instead of just doing.
Everyone needs a good meal, especially under stress.
 
Pork chop casserole is one I like to make & bring.
Brown pork chops. Slice up potatoes & onions into a lightly greased 9x13 casserole, place the browned pork chops on top of that.
Mix up a can of Golden Cream of Mushroom soup w/a can of water & a jar of sliced mushrooms & pour over this. Sprinkle the top with parmesan cheese if you like.
Bake at 350 for about an hour. Cool, wrap & freeze. It keeps well & reheats beautifully.
