I need Advice on hatching my Mystery Duck Eggs!!!

This is my first time incubating and hatching eggs. I have about 15 Duck eggs that were gathered from around my neighborhood lake after a flood. Currently there seem to be 3 breeds of ducks living in the lake. Peking, Muscovy and Mallard. Because I do not know the exact breed, I am unsure of the egg gestation. I am not sure when to remove eggs from turner and lay them eggs down to hatch. Ive read that they should be laid down 3 days before hatch but I am unsure how to determine that. Will I hear them chirping? I am so nervous I will do them harm by not removing them from the turner in time! Please help!!!

Update: 2 eggs are piping now! I'm removing them to lay them flat. They were in the incubators turner the whole time!!!
