I need brown-bag ideas for hubby's lunch....

I need some ideas for my husband's lunch. He is "mobile"...at different locations every day, and mostly works outside. He takes a cooler with drinks, so he can take a cold lunch, but usually does not have access to a microwave.

Right now he usually does a drive-thru lunch, which he's getting tired of. I already make him a sandwich every day for him to eat on his way to work (he never gets out of bed early enough to eat a "proper" breakfast...not a morning person...LOL).

So...all you creative people and good cooks...can you help me with ideas for a decent cold lunch?
 
Cold chicken pesto pasta salad:
pesto or italian dressing
cooked chicken
cooked pasta
whatever veggies he'll tolerate raw (peppers, broccoli, onion, olives)

Toss together cold and send with a fork.

pita bread pizzas with hummus
Spread a pita with hummus and top with above mentioned veggies

Sandwich wraps-use fancy tortillas for extra flavor
 
I get those beef jerky sticks that he likes, hard boiled egg. i cut up chunks of cheese. Lance crackers that come in several different flavors. cottage cheese in a small container, chips, banana, apple, leftover macaroni salad and potato salad. cold fried chicken....all sorts of stuff.

Cold steak, sliced really thin, sandwich with bleu cheese (or swiss, or cheddar)

Quiche can be served cold or lukewarm.

You can invest in hot packs that work like cold packs to keep food warm. Then you can send chicken pie, stews and soups, roast beef and potatoes, etc.

You can also visit a truck stop and get a lunch box sized oven. It plugs into the cigarette lighter and will keep one pot type recipes warm for him.

You can also wire a can of soup or beans to the muffler and have hot food that way.

Hard boiled eggs
Fried egg sandwich
Omelets
I've wrapped up all kind of stuff in tin foil and put it on the manifold on the truck motor. Works great. Good Luck, Woody
 
Here's what my Hubby likes MOST of all out of all his cold lunch foods. It's Pepperoni "Roni Rolls" as they're called here usually. You could make them with different things he likes in them, sausage, pizza greens, even sliced thin steak & his choice of cheese. My family eats these quickly anytime I make them. My family also LOVES Linguine. I make it with either Linguine Pasta noodles or Spaghetti Pasta, whatever I happen to have on hand. & add diced vegies we like, cheese & chunked pepperoni.... add it all together with Italian Dressing & it's gone in no time too.

We eat it chilled cold.

We also make what we call our Tri-Colored Pasta Salad, it's made by taking tri-colored spiral pasta & then adding Ranch dressing (or creamy Italian dressing if you prefer, -we've had it both ways). & chilling it, eating it cold. I'm not a Ranch dressing fan & like it alot.

We'll sometimes on the wkend get Pizza to eat for supper & get an extra pizza for leftovers (my son will grab a slice as breakfast when going out the door to school on wkdays) & Hubby will take pieces for lunch. Left over Pizza around here is eaten cold Vs warm. Around here Little Ceasars has $5.00 med/large Pizzas that are great for left overs.

Salad is always a nice cold lunch too. Hope this helps
