I Processed My First Chickens... but really need some tutoring

Hi everyone -

I'm new to this forum, and, following the posted instructions, processed my first 2 chickens over the weekend. All in all it was a success, although I'm having a hard time waiting three days before cooking them. I'm even more determined to grow our own chickens for meat.

My husband was kind enough to do the dispatching, but then he disappeared mumbling something about having to go into work to send an e-mail he forgot about - go figure.

The first steps were really quite easy. Using rubber-palmed gloves I was able to get them plucked in about 5 min each. However, I really didn't seem to be able to follow the instructions once I got down to cleaning out the insides. Nothing seemed to be quite like the pictures and pulling everything out (forgive my crudeness) was difficult and awkward.

Any chance there is someone in Maryland or Virginia who would be willing to give me a personal lesson on this technique? I live in Southern Maryland and would be willing to drive an hour or two in any direction in order to study and perfect my technique.

I live just below Fredericksburg off I-95. I don't at this time have any meat birds to dispatch. We did them all a while back.
