January 11 at 11:15 I put my eggs in the bater. Today is the beginning of the 18th day. Tomorrow is the beginning of the 19th day. Should I take the turner away tomorrow at 11:00 or today?

Tomorrow. If you put them in on the 11th, they will hatch on Friday, the 1st. Count back three days, and you come to January 29th. That's tomorrow. At 11:15.

You know, it isn't an exact thing. I've been known to take away the turner at the end of Day 17 and had a great hatch. Anytime during Day 18 is just fine, beginning, middle, end.

I'm with Cyn...I alway do mine on the 18th in the evening after I have turned one last time and candle....
