It sounds like they're just going through culture shock. Your environment is completely different from anything they've ever seen. They're probably terrified. Just give them some time to adjust.
As days pass and they see nothing terrible happens to them, they'll start to relax, venture out into the run, and feel more at ease. If you bring food whenever you come to the coop, they'll be running up to you in no time, clucking for treats and elbowing each other out of the way.
They do love mealworms and earthworms, crickets, all kinds of stuff. Mine love grapes, tomatoes, lettuce, sunflower seeds, all kinds of goodies. They love table scraps. Mine won't eat raw winter squash, but toss out a cooked one and it vanishes in minutes.
