I wanted to start a new thread on quail recipes. Recipes that you like most, it can be with the eggs or meat. I see a lot of people ask what do you do with your quail? lets show them. please post the recipe for all of us to explore

I have yet to get the gumption to process some of mine, but I'll give you a free bump!! I know there are many on here that do!

I love to throw them on the grill with a strip of bacon held in place with a toothpick, or panfried like a chicken... Put in a cake pan, covered with cream of mushroom soup and baked..... The possibilities are endless

Let me dig up the one I sent Boyd.... It works for quail or chicken thighs if you're out.

Let me see for 8 people....

2 cans pineapple chunks (the big 20oz cans)
2 carrots thinly sliced (say 1/8th rounds)
4 bell peppers (any color)
2 cups snow peas, frozen peas, frozen stirfry veggies, etc.
onion cubed
clove garlic crushed
1 bottle of teriyaki glaze

1 piece chicken per person, (breast, thighs) boned, skinned and chopped into 1 inch pieces. ***

**use 2 quail per person, halved and cleaned***

Grab a big skillet and brown the chicken chunks **quail Halves**, toss in onion & garlic.

Toss EVERYTHING into a pyrex dish, add sauce on top, stir. (you'll wanna cover the dish with foil it's sticky) and bake 35 minutes, covered with a lid or foil.

While it's in the oven make 4-5 cups rice. (say 2.5 cups rice in 5 C water) Do not try to fake it with minute rice, you need it sticky like real rice.

Put 1/2c rice on a plate and cover with the chicken *quail** mix (the sauce will make the rice sticky and yummy too).

I'm working on a lime and chipolte recipie... need to hit the market tomorrow for a few bits.

I am adjusting a cheese stuffed quail in bacon to use salt pork instead (for a better baconyness), but right now Im stuck waiting on the market's shipment of quail, once I get a steady suppily here I can help with more volume.

Serves 4 Cold Shellfish Seafood Salads Main course Gluten Wheat Dairy Free




Ingredients

12 Quail's Eggs

Mixed Salad Leaves

175g/6oz Fresh White Crabmeat

175g/6oz Tomatoes, chopped

1 Garlic Clove, crushed

Salt and Black Pepper

1 tbsp Sherry Vinegar

Fresh Chives to garnish




Instructions



1. Put the quail's eggs in cold water, bring to the boil and simmer for 30 seconds. Run under cold water and shell them carefully.



2. Arrange the salad leaves on individual plates, place the eggs on the leaves, together with the crabmeat.



3. Gently heat the tomatoes, garlic, seasoning and vinegar for 5-6 minutes. Pass through a sieve.



4. To serve - spoon the tomato puree around the salad and garnish with lengths of chives.

I plan on doing them up whole, similar to how I do my fried chicken. Soak overnight in buttermilk. Double bread in seasoned flour and then deep fry in the castiron dutch oven. Mmmmm....serve with biscuits and gravy.
