Ideas for cornmeal?

DBF and I make our own pizza quite often. We use cornmeal on the dough, as well as when we - rather *I* - make bread. Tonight we were are the grocery store and realized it was chearper to buy a 5-lb bag of cornmeal than a 40-oz box.

So now I've got a 5 pound bag of cornmeal.

I am going to make up some "instant" cornbread muffin mixes but am not sure what else to do with it.

I'd love your ideas!

Put it in the freezer and wait until you need it again?

Throw a little in pancakes.

Makes em yummy!

Make fried cornbread or hoe cakes. Great with a pot of peas, greens or buttered with some warm syrup.

2 cups cornmeal
1/4 teaspoon salt
1/4 cup self rising flour
1 cup water
1/4 cup bacon drippings or cooking oil (bacon drippings makes them too good, hehe)
1/2 cup milk or buttermilk
1 egg

Gently stir together all ingredients in a mixing bowl.
Drop batter with a large spoon into a hot, well greased heavy skillet or griddle.
Cook as you would for pancakes, turning to brown both sides.
Serve hot.

Mexican cornbread with rotel.

Corn fritters with real creamed corn in the recipe.

Homemade corndog - my kids loves these the best.

Lots of things to make with corn meal.

i enjoy hot cornmeal made like old fashioned oatmeal with butter maybe some honey.
