Ideas for cornmeal?

You can make soft cornmeal (mush) and use like mashed potatoes, or add cheese and serve as a side. My kids like when I take leftover mush, spread it in a pan and refrigerate overnight. Then the next morning i cut it into triangles, fry in bacon fat and top with maple syrup for breakfast.
 
Blueberry Corn Muffins

1 cup all-purpose flour
1 cup yellow cornmeal
1 tablespoon baking powder
1 teaspoon salt
1/2 cup unsalted butter, melted and cooled
1 large egg
1/3 cup honey
1/3 cup granulated sugar
3/4 cup milk
2 cups blueberries
1 tablespoon all-purpose flour
Heat oven to 425*F (220*C). Grease and flour a 12-cup muffin tin or line with paper liners.
Combine 1 cup flour, cornmeal, baking powder and salt in a medium bowl; make a well in the center.
In another bowl, whisk together the melted butter, egg, honey, sugar and milk. Pour mixture into well. Mix batter until just moistened; do not over mix.
Toss blueberries with 1 tablespoon flour and gently fold into batter.
Fill prepared muffin tins two-thirds full. Bake for 18 to 20 minutes or until muffins test done. Cool in pan on wire rack.
Makes 1 dozen muffins.

I got this off of the internet, and it's quite tasty.

I also get a corn muffin mix from WinCo (about 70c a lb!) in the bulk section, ( they have a little recipe card that comes with it) and like to add a little sugar ( no more than 1/4 cup per batch), cinnamon & nutmeg to it, and serve it as cornbreaD ( it's really more like corn cake ~ sooo tasty) with dinner.

We also like the sweetened cornbread served with hot spiced peaches over the top, and either whipped cream or clotted cream over that. MMMMmmmm!!! Any fresh fruit served over the top is soo tasty. It's so much better than a yellow cake or any cake, lol , plus, since my hubby is diabetic, the fresh fruit & low sugar is perfect.
