If I wanted to let my chickens free range...

We have an acre fenced, and our 23 birds free range when we're home to supervise. They also have a fenced run of their own

They seem to respect our 6' privacy fence and 4' post and rail fence around the perimeter of the acre.

They also seem to respect the 3' fence around our garden, and haven't tried to get in it at all. However, they don't necessarily respect the exact same fence that encloses their run, and there's always 2 or 3 that will hop it to go roaming around the yard. It's not that big of a deal to us-- the run is just something to keep them mostly contained when we're not home.

I think, therefore, the fencing requirements are more an issue of motivation than anything else! I wouldn't count on anything less than 4 feet, maybe more, keeping them in., though if they have plenty to keep them busy, they may not care too much to get out.

Ugh, I am so envious of those of you whose birds stay within their boundaries. I have 4' chain link fence around my VERY LARGE run, and my birds fly out all the time. They are heavier heritage breeds too. I have had to cover it with netting because they were destroying my garden! Also, we can't have our rooster around the children and he would also fly out.
HOWEVER, because our fence is chain link there is a pole that runs horizontally across the top. My birds fly up to that pole, sit there, and then fly over. They don't fly over in one single action. I bet if you had some fencing like the others here mentioned, that didn't have a bar across the top, they would be less likely to go over.

I don't label my eggs as organic, but I do state that my chickens are organically fed. I do consider them organic eggs though, and I price them as such.

I call my eggs just FARM FRESH BROWN EGGS, seems to work for me. With all the problems with organic today it's easier not to try, just go farm fresh. Most people if they come to your place to pick them up will probable be happy with that.
