I'm going to take a go at incubating duck eggs info/help needed

I have gotten some duck eggs out of my Rouen hen, cracked them open to find them fertile. I am going to TRY to incubate them. I have a cheap little LG still air, no turner.
I have questions about humidity and turning. How do I get humdity to a certain point?
how do you turn eggs?

I'm a newbie to the incubating world!
 
to get the humidity up you put water in and to get the humidity down you take water out

the humidity in an lg still air is hit and miss, I put water in and then control the humidity with the little holes on top. Generally I leave the red plugs out (2 of them) and then put them in right before hatching. This time, with my ducks, I have left one plug in. There is some variation day to day, and as the water runs out, but I've had over 80% hatch rate so far and no problems.
