I think you're probably correct.

I don't know Jersey Giants well, but that's pretty red for 5 weeks.

I'd say you're right on the EE's but on the JG, for 5 weeks there is so little comb development, I'd say you could have a little pullet....
 
I would say you are right about the EE ( but EE can trick you sometimes)
The first JG I think is a pullet, my BA hens had bigger combs and wattles then that at 5 weeks old. The chick in the last photo does it have a single comb or something else?
Here are my JG roos at about 4-5 weeks old they had larger combs, no tail still, and stood very upright.
