Lights in the coop. Increase the length they're on gradually until they're getting about 14.5-15 hours.

This will age the birds though, but increasing their laying since they aren't having the natural rest period

Very true, Putting lights in the coop will be a short-term solution and will get them laying more, but it will impact they’re span of laying.

Thank you everyone very much for your help! I didn't realize it would impact them health wise, so I dont think I will do that, and just buy some eggs at the store until spring. thanks again!

I am not sure that it will hurt their health. And by this time of year, people down south are getting more day light, so adding lights for a couple of weeks until our daylight catches up...I don't think will hurt anything.

High laying birds do tend to burn out and seem to die much younger, but that is because they consistently lay. By now the OP's birds have had a break, and adding light for the next 4-5 weeks I don't think will hurt the birds, just make eggs.
