I have a rite farm pro 3600 incubator (think that's what its called) and ofc the temperature says something completely differently to the two hydrometers I have in there. 101F is coming across as 37.5C on my incubator. Should I set it to 101F? or to 99F(reading as 35C). I have had hatches with the 35C but now im dry hatching and suddenly became aware of how low the temperature really was. What should I do?

You need to use a calibrated thermometer to check the actual temperature in your incubator and you need to check the temperature in multiple spots. Once you are satisfied that you know the actual temperature in the incubator, set the controller to whatever is required to provide the desired actual temperature based on what your calibrated thermometer reads.

On a side note, a hydrometer measures the specific gravity of a liquid. A hygrometer will measure the relative humidity.

its a hygrometer I meant to say lol. So I should leave it as 101F? cuz the both Hygrometers are saying 37.5
Hygrometers do not read temperature, they measure relative humidity. I assume that you have combination units that have both a thermometer and a humidity sensor. If they are calibrated, two separate calibrations are necessary, one for the temperature and one for the humidity (salt test), and you have checked the temperature in multiple places and are satisfied with the results, you can go for it.

37.5°C = 99.5°F which is the appropriate temperature to use for a forced air incubator.

101°F = 38.3°C and is the appropriate temperature for a still air incubator.
