Incubator question

I built a cabinet incubator and put a waffer thermostat in it. I wanted an electronic one but didn't wanna dish out 80 bucks. I just seen a honeywell one at wal mart the ones for a house. Would something like this work? It was only 20 bucks.

Secondly, these thermostats have a "differential that's waaaaay yonder too far apart for holding +/- 1 degree.
