Do you really need an incubator to hach and grow chicks, Or will they hach and grow with a broody hen?

You can use a broody if you have one. It's just often more convenient to use the bator because you can set a larger number of eggs and you don't have to wait for its hormones to say it's ok to hatch eggs.
 
Broody hens are more reliable (in my opinion) than incubators. No temp or humidity fluctuations; no worries about power outages.
