Innocent Question from Someone who's Never had Chickens.

Some roosters can mate with their ladies and do a great job, like mine. Other roosters either don't have a good technique, long spurs/nails, or mate too often which can break off feathers and scratch the girls backs.
Aprons are just a way to protect the ladies from getting cuts or losing all their feathers.
 
I have a question about chicken aprons. Why do people put them on their birds? Is it to protect against an over enthusiastic Roo? Keep them warm? Fashionable good looks? All of the above?
Yes, protection from rooster's feet during mating is the main reason.

I've seen a few times people mentioned warmth (if a hen had lost all the feathers on her back).

People do choose colors and designs based on looks-- if you are going to use it anyway, it might as well look good :)
