Insulating the ceiling of my coop?

Ventilation MUCH more important than insulation. I would not. and if you have extra house wrap, remove those blankets you stuffed in there to prevent drafts, tack up more house wrap to buffer and direct them, while getting the most of that draft for air exchange / moisture removal purposes.

Assuming your metal roof sets right on those purlins, or perhaps right on plywood decking set on those purlins, yes, your ridge vent has been rendered into an architectural feature, rather than a key design element as part of a functional passive coop ventilation system.
 
My coop has a metal roof with one panel of opaque plastic sheeting to let in light during the day. In the inside there’s currently a layer of vapor barrier. It’s supposed to get down in the teens and even down to ten in the next few days and I’m nervous it won’t stay warm enough in there. The walls are all double insulated with radiant barrier and plastic sheeting but I wasn’t sure if I could add the radiant barrier to the roof as well. Is it ok to add it with the vapor barrier? Will it cause any problems? Right now it stays pretty much whatever temperature it is outside in there. 😢 I can’t figure out what more I can do to keep it warmer.
I live in Northern Minnesota where it gets to minus 35 degrees and lower. I just spoke to a friend who raises chickens. Her coop is not insulated whatsoever and her chickens never have a problem. You should be totally fine.
