The other day I was driving to a park, in the middle of Amish country. I saw a poultry barn, similar to ones I've seen used for turkeys, that housed several hundred Khaki Campbell ducklings. I could think of no other reason for someone to be raising this many Campbells except that they were for eggs.
I didn't know there was a large market for duck eggs/balut. Much less in Lancaster county, PA!
