Usually you can tell by the crest. With a rooster's crest, the feathers are narrow and pointy and the crest has more of an upright appearance. With a hen, the shape of the feathers is more rounded and the crest has a puffy, rounded appearance. Sometimes you can tell at hatch by the shape of their crest--if the back of the crest is flattened, it's a roo; if the whole top knot is rounded, it's a hen. But once the feathers start to grow in, you have to wait several weeks to be able to tell the difference again.

I have no luck telling the difference at hatch, though!!
