Usually you can tell by the crest. With a rooster's crest, the feathers are narrow and pointy and the crest has more of an upright appearance. With a hen, the shape of the feathers is more rounded and the crest has a puffy, rounded appearance. I have no luck telling the difference at hatch, though!!
