Is anyone able to help me identify which breed & gender these birds are?

Yeah, I’m thinking the first guy is a lemon cuckoo Neiderrheiner, but those are super rare. He’s definitely not a Bielefelder, he’s got the wrong feather pattern and leg color. Where did you get him? He could possibly be a lemon cuckoo Orpington…

I agree that he looks like a lemon cuckoo Neiderrheiner, though I do think the original poster would know what they bought it as if it is such a rare breed. What was he sold as?

Agreed. Some hatcheries stock them so it isn't unheard of. I know personally I had sold Rhodebars/Golden Cuckoo Marans/Horstman line RC RIRs/many other weird breed cockerels at auction where I guarantee not a soul knew what they were and over ten years ago when they all were quite unheard of. I always wondered if someone ended up with them wondering what they were. Again best to narrow down what's most likely and not jump to conclusions but he really looks like a Niederrheiner...
