Is around 80% humidity too high for day 18-21? Why or why not?

It seems most people here have problems with getting humidity high enough for the hatch, but I seem to have the oppisite problem... when I fill up all my water reservoirs, my styrofoam inbubator will shoot up to over 80%. If I just fill up one of the reservoirs, it doesn't get high enough, so I have had a problem trying to keep it in the 70% range. It would be much easier to keep it around the 80% mark.

Is this bad? Can this still drown the chicks, even though it's day 18 or later? Or at this time, is it the more humidity, the better?
 
I can't keep the humidity down this time either. I have 23 turkey eggs in, and no water in the incubator at all and the humidity keeps around 70%. I candled two days ago and could see blood vessels starting to show up in 17 of them for sure. That was on day 4 or 5. I have no idea how to lower it when I don't have any water in it to begin with.
