My girls are 1 year old and I noticed last week that my Jersey Giant is getting spurs! The little nubs are about 1 cm long right now. He/she doesn't crow but also hasn't laid eggs. I looked at pictures of other Jersey Giants and that's not helping me, Gretchen looks to be somewhere between the hens and roos. The comb and wattle are small like a hen and the tail feathers are sort of curly and messy like a roo. Behavior is shy like a hen.
